Eldritch Bubble Bread
What you will need to start with is 1/4. oz dry yeast, 2 tsp. honey, 210 g. all-purpose flour, 420 g. all-purpose flour, 5 tsp. diamond salt, 7 tbsp. olive oil, 4 tbsp. butter, some flake salt, some cherry tomatos, hot honey, and balsamic glaze.
First, put your yeast, honey, and water into a mixing bowl, then gently agitate until the honey dissolves. While you are giving that time to come to life, you will add all of your dry ingredients, such as your flours and diamond salt, and mix those together. Feel free to use your hands or a fork. Now add your living frothy yeast to your flour and mix until you get a shaggy dough. Into a larger bowl, add half of your olive oil, drop in your dough, and give it a little stretch and fold until it's smooth. Let it rest for an hour and a half, then you will come back and scoop it from the bottom, stretch, and shake. After doing this, rotate the bowl 90 degrees and do that all the way around. This will happen 4 times every 1.5 hours. While all of that is taking place, feel free to slice your cherry tomatoes in half and butter your 9x13 pan. Set your oven to 450F and lay your dough in the pan, with the remaining oil on the bottom. Let rise for an hour, then use your fingers to make dibbbits in the dough and pour the rest of your melted butter over the top, and place your tomatoes. Bake it for 25 to 30 min “ could vary on the moisture from the tomato and air,” then bring it out to rest and drizzle your hot honey and balsamic glaze. Also is great for sandwiches without the toppers. Sallami with swiss, pickle, mustard, and mayo is my go-to for this bread.
